Pumpkin Pancakes to fill ya up


I've been trying to decide which recipe to share first; we're having fun being creative with a vegan diet. This is already week 4, and we're loving the way we've felt! Just to kinda set the stage as far as mainstay ingredients for baking vegan (specifically) here's what I use:
earth balance vegan buttery spread instead of butter (but I've been using this for over 6 years & we love it... it can be used just like butter for cooking, baking - whatever!)
organic agave syrup instead of sugar (low glycemic index & replaces refined white or brown sugar with awesomeness! That's a word, right? Sidenote: had never even heard of the stuff til Ken had cancer. You can find it at Costco and health food stores I'm sure.)
Vanilla Rice Dream rice milk instead of regular milk/dairy
no sugar added applesauce or olive oil instead of other oils (apparently olive oil is one of the best/most health-benefit oils you can cook with, especially for cancer patients)

Ok, now that you know what's up my sleeve... here's the first recipe I'm going to share. We'll start with the carbs. haha Pumpkin pancakes that are dense and super filling, with enough "Fall" spices to give it mega punch... topped with blueberries and 100% pure maple syrup or agave works as syrup topping too. Deeeeeelish and my idea of perfect on a Saturday morning. ;)

PUMPKIN PANCAKE RECIPE:
2C whole wheat flour
2 TBS agave syrup
2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp salt
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1 & 1/2C vanilla rice dream rice milk
1/2C canned pumpkin
2 TBS olive oil


In large bowl, combine all ingredients except rice milk/pumpkin & oil. Combine wet ingredients and then add to dry, mixing everything together til you get your batter. ;) Pour on hot griddle that's been lightly greased with earth balance... cook til each side is golden brown. ;) Top with whatch'ya like and enjoy! :)
